Brindisa’s cheese rooms

For over 30 years, our sister company Brindisa, has been dedicated to importing and celebrating the finest Spanish cheeses. Since 1989, when the founder Monika Linton and her brother Mark first began bringing Spanish cheese to the UK,  they’ve focused on sourcing from small, often remote dairies across Spain. Monika’s passion for discovering unique, artisanal cheeses has been at the heart of Brindisa’s mission from the very beginning.

Designed to enhance the care of the artisan cheeses, imported directly from Spain, our Balham cheeserooms have meticulously recreated the maturing environments found in Spanish dairies, ensure that the wheels develop their authentic character, just as they would in their homeland. Cheese making is a unique craft, deeply connected to the land, the seasons, and the unwavering spirit of the small-scale artisan. Our small but passionate ‘cheese team’ is deeply devoted to nurturing cheese with true personality and exceptional quality.

Cheesemonger's Choice

Our cheesemonger’s latest selection is the nutty, slightly sweet Zamorano Vincente Pastor.  A rich, sheep’s milk cheese from Castilla y León, traditionally crafted in the Zamora region that offers a robust yet balanced flavor profile with hints of butter and caramel. The texture is firm but creamy, allowing for a long lasting tang.

Harmoniously paired with our Brindisa Ancestral, a fresh and fruity natural sparkling wine that complements the cheese’s savory notes by creating a symphony of taste reminiscent of rolling Spanish hills and sun-kissed pastures.
