From a Humble Potato Warehouse to Six Vibrant Locations

This year marks a special milestone for us at Brindisa Tapas – 20 years since we first opened our doors. On a crisp evening in November, we returned to where it all began, our flagship restaurant at London Bridge, to celebrate two decades of bringing the flavours of Spain to the heart of London.

What began as a bold idea in 2004—a tapas bar housed in a converted potato warehouse—has flourished into a family of six lively Brindisa locations across London. Over these 20 years, we’ve stayed true to our mission: to celebrate the diversity and depth of Spanish cuisine while creating warm, welcoming spaces for friends, family, and food lovers alike.

The evening was a chance to reflect on our journey and recognise the incredible people who have made it all possible. From the team members who first helped us open our doors to the staff who carry our vision forward today, their dedication and passion have been the foundation of our success.

An evening of celebration

The evening was a feast for the senses, featuring an array of tapas crafted by our talented Head Chefs. From bold, authentic flavours to innovative takes on Spanish classics, every bite reflected the essence of Brindisa. We also took a moment to honour a significant milestone: 60 years of Perelló. Their premium olives and conservas—like silky anchovies and briny Gordal olives—have been cornerstones of Spanish cuisine and a proud feature on our menus.

As we look to the future, we’re more inspired than ever to continue sharing the vibrant flavours of Spain with you, creating spaces where food, laughter, and memories come together. Here’s to the next 20 years of Brindisa Tapas!
